Tzatziki

  • 1 ½ cups yogurt , plain, no-fat
  • 1/2 cup cucumber , chopped
  • ½ tsp. salt
  • 1 clove garlic , minced
  • 1 tsp. lemon juice

Instructions

Instructions:

  1. Place yogurt in a cheese-cloth sieve set over bowl; cover and let drain in refrigerator for 4 hours or until reduced to ¾ cup.
  2. In bowl, sprinkle cucumber with salt, let stand for 20 minutes. Drain and place in sieve; press out excess moisture.
  3. In bowl, combine yogurt, cucumber, garlic and lemon juice
