Thai Chilli Basil Chicken
Ingredients

- 7 ounces chicken , boneless, cut into bit size pieces
- 1 shallot , cut into 4 cm., 2” lengths
- 1 cup thai basil leaves , loosely packed
- 2 large cloves garlic , finely chopped
- 1 thai chilli , deseeded and finely chopped
- 1 ½ tbsp. oil
- 2 tsp. oyster sauce
- 2 tsp. soy sauce , 1 tsp light, 1 tsp dark
- 1 tsp. sugar
- 2 tbsp. water
- any rice , cooked

Instructions:
- Mix together oyster sauce, soy sauces, sugar and water in a small bowl
- Heat oil in wok or pan over high heat.
- Add garlic and chilli and cook for 10 seconds. Don’t inhale – the chilli will make you cough.
- Add the white part of the shallot and chicken ad fry until cooked, around 2 minutes.
- Add the sauce and cook for 1 minute until the water evaporates to make a thick glossy sauce.
- Remove from the heat and toss through green part of shallots and the basil leaves. Stir until just wilted and serve immediately with rice.
