Thai Chicken Peanut Skillet

Ingredients

Main Dish

  • 2 tbsp. olive oil , extra virgin
  • 4 chicken breast , boneless and skinless
  • a sprinkle of salt
  • a sprinkle of black pepper
  • 2 bell peppers , thinly sliced
  • 2 carrots , large and chopped
  • 1 tbsp. ginger , minced
  • 2 cloves garlic , minced
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce , low-sodium
  • 1 lime equivalent lime juice
  • 1 cup chicken broth
  • 1/3 cup peanuts , chopped roasted peanuts
  • any cilantro , freshly chopped, for garnish

Instructions

  1. In a large skillet over medium heat, heat oil. Season chicken with salt and pepper and cook until golden and no longer pink, 8 minutes per side. Transfer to a plate.
  2. Add bell peppers and carrots to skillet and cook until soft, 5 minutes.
  3. Add ginger and garlic and cook until fragrant, 1 minute more.
  4. In a small bowl or glass measuring cup, whisk together peanut butter, soy sauce, and lime juice.
  5. Add peanut sauce and chicken broth to skillet and bring to simmer. Return chicken to skillet then add peanuts. Let chicken simmer in sauce 5 minutes.
  6. Garnish with cilantro
