Grilled Vegetable Salad with Dijon Balsamic Dressing

  • 1 large red onion , chopped
  • seeded red bell pepper
  • seeded yellow bell pepper
  • seeded green bell pepper
  • 1 medium zucchini
  • 1 bunch asparagus
  • 4 cloves garlic , minced
  • 1/4 cup times 2 olive oil balsamic dressing
  • to taste salt
  • to taste pepper
  • 2 tbsp. dijon mustard
  • optional olives

  1. Preheat grill to medium high. Cut vegetables into 1:-2” strips or chunks, place in a large bowl..
  2. Add the garlic and a ¼ cup salad dressing to vegetables. Toss and season to taste with salt and pepper.
  3. Whisk together the remaining balsamic dressing and Dijon mustard. Set aside.
  4. Place vegetables in a barbecue grill basket and grill for 6-8 minutes per side until slightly charred and tender. Carefully remove the vegetables from the grill basket and toss with the dressing.
  5. Add olives if desired.
