Company Potatoes

  • 8 cups potatoes , thinly sliced
  • 2 tbsp. bread crumbs
  • 1/2 cup butter , or margarine
  • 1 tbsp. salt
  • 1/2 tsp pepper
  • 1/2 cup onions , thinly sliced

  1. Preheat oven to 375 degrees
  2. Soak thinly sliced potatoes in cold water for 20 minutes, drain and dry well
  3. Oil 2 quart casserole and sprinkle bread crumbs on bottoms and sides
  4. Place a layer of potatoes on bottom, overlapping
  5. Sprinkle with salt, pepper, thin layer of onions, and a few dollops of butter/margarine
  6. Continue layers till you have at least five layers (or fill dish)
  7. Cover lightly and bake till golden brown and potatoes are tender.
  8. Place a hot dish over top and invert (should look like a cake).
  9. Slice into smaller pieces
