Chinese Chicken Salad

Ingredients

  • 3 cups chicken , cooked and shredded
  • small head napa cabbage , thinly shredded (about 6 cups)
  • 1/2 small red cabbage , shredded (approx.. 3 cups)
  • 1 cup matchstick carrots , thinly julienned
  • 3 ounces snow peas , ends trimmed and julienned (approx. 1 cup)
  • 1 red bell pepper , julienned then halved
  • 1-2 11 oz. can(s) mandarin oranges , in water, drained
  • 1/3 cup cilantro , loosely packed, chopped
  • 1/3 cup green onions , chopped
  • 1/2 cup craisins , optional but recommended
  • 2/3 cup almonds , sliced
  • 1 1/2 cups chow mein noodles
  • 2 tbsp. sesame seeds
  • 1/3 cup rice vinegar
  • 1/4 cup soy sauce , low sodium
  • 2 tbsp. sweet chili sauce
  • 1 1/2 tbsp. sesame oil
  • 2 tbsp. sugar
  • 1/2 - 1 tsp. sriracha , optional
  • 1 1/2 tsp. garlic , minced
  • 1 1/2 tsp. ginger , fresh, grated
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 tbsp. canola oil

Instructions

Instructions:

  1. Mix together rice vinegar, soy sauce, sweet chili sauce, sesame oil, sugar, sriracha, minced garlic, grated giner, salt, pepper, and canola oil in a mason jar and shake to mix well. Remove 3 tbsp. of dressing to a bowl with the chicken. Stir until evenly coated. Let chicken marinate while you prep the vegetables. Refrigerate the remaining dressing.
  2. Add together all remaining salad ingredients, except the chow mein noodles. If you are expecting leftovers, drizzle the desired amount of salad dressing over the salad and toss until well combined. Add chow mein noodles to individual servings.
