Wild Mushroom Pizza with Arugula and Pecorino

  • 3 tbsp olive oil , divided
  • 4 cups mushrooms , mistake or chanterelles, sliced
  • 1 pound pizza dough , flat breads also good
  • 2 cloves garlic , sliced thin
  • 4 ounces mozzarella , thinly sliced
  • 3 cups arugula
  • 1 tbsp agrumato lemon oil , (or olive oil & 1 tbsp lemon zest)
  • 1/4 tsp salt
  • 3 tbsp pecorino , shaved (or toscana cheese)

  1. heat 2 tbsp olive oil in skillet over medium heat, cook mushrooms 2.drizzle 1 tbsp olive oil over rolled out pizza dough or flatbread; bake 10-15 minutes at 500 degrees 3.toss arugula with lemon oil and salt; add to top of pizza
