Tropical Black Bean Salad

- 1 19 oz (540 ml) can black beans
- 1 yellow bell pepper , chopped
- 1 large tomatoes , seeded and diced
- 1 jalapeno , seeded and finely chopped
- 1 small papaya , seeded, peeled, and diced
- 1 ripe mango , seeded, peeled and diced
- 1/2 cilantro , fresh, chopped
- 3 tbsp balsamic vinegar
- 1 tbsp lime juice
- 1 tbsp cooking sherry
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- if desired tortilla chips

- Drain and rinse black beans. In a large bowl, combine beans with prepared vegetables, fruits and cilantro.
- Whisk together vinegar, lime juice, sherry, oil, salt and pepper. Drizzle over salad. Toss well to mix.
- Let salad chill for 2 hours, stirring occasionally. Serve garnished with tortilla chips
