Tropical Black Bean Salad

  • 1 19 oz (540 ml) can black beans
  • 1 yellow bell pepper , chopped
  • 1 large tomatoes , seeded and diced
  • 1 jalapeno , seeded and finely chopped
  • 1 small papaya , seeded, peeled, and diced
  • 1 ripe mango , seeded, peeled and diced
  • 1/2 cilantro , fresh, chopped
  • 3 tbsp balsamic vinegar
  • 1 tbsp lime juice
  • 1 tbsp cooking sherry
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper
  • if desired tortilla chips

  1. Drain and rinse black beans. In a large bowl, combine beans with prepared vegetables, fruits and cilantro.
  2. Whisk together vinegar, lime juice, sherry, oil, salt and pepper. Drizzle over salad. Toss well to mix.
  3. Let salad chill for 2 hours, stirring occasionally. Serve garnished with tortilla chips
