Thai Peanut Crunch Wraps

Ingredients

  • 4 cups cabbage , shredded
  • 1 1/2 cups (approved 5 large carrots) carrots , shredded
  • 1 red bell pepper , thinly sliced
  • 1 cup edamame , cooked and shelled
  • 1/2 cup cilantro , fresh, chopped
  • 1/2 cup green onions , chopped
  • 1/2 cup peanuts , honey roasted
  • 1 cup wonton strips
  • tortillas , soft

Sauce

  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp garlic cloves , minced
  • 1/4 cup peanut butter
  • 1/2 tsp red pepper flakes
  • 1 tbsp soy sauce

  1. In a medium bowl, whisk together rice vinegar, soy sauce, lime juice, honey, and garlic. Add the peanut butter and red pepper flakes. Stir until smooth.
  2. In a large bowl, combine all ingredients except the wraps. Divide the mixture over the wraps and drizzle peanut sauce on top. roll up the tortillas and cut in half before serving.
