Thai Crunch Salad with Peanut Dressing
Ingredients
Dressing
- 1/4 cup peanut butter , creamy
- 2 tbsp rice vinegar , unseasoned
- 2 tbsp lime juice
- 3 tbsp vegetable oil
- 1 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic , chopped
- 1 inch ginger , peeled and chopped
- 1 tsp salt
- 1/4 tsp red pepper flakes
- 2.5 tbsp white sugar
- 2 tbsp cilantro , chopped
Main Dish
- 4 cups napa cabbage , shredded
- 1 cup carrots , shredded
- 1 red bell pepper , thinly sliced into bite size pieces
- 1 english cucumber , cubed
- 1 cup edamame , cooked and shelled
- 2 medium scallions , thinly sliced
- 1/2 cup cilantro , loosely packed and chopped

- Combine peanut butter, rice vinegar, lime juice, oil, soy sauce, honey, sugar, garlic cloves, ginger, salt, red pepper flakes and 2 tbsp of cilantro in a blender and blend till smooth.
- mix together cabbage, carrots, peppers, cucumber, edamame, scallions and 1/2 cup loosely packed cilantro.
- pour dressing on salad.
