Thai Chickpea Salad with Curry Peanut Dressing

Ingredients

Salad

  • 1 red bell pepper , diced
  • 1 cup carrots , shredded
  • 1/2 head red cabbage , small, chopped
  • 1 (15 ounce) can chickpeas , rinsed and drained
  • 1/2 cup cilantro , chopped
  • 1/4 cup green onion , chopped
  • 1 jalapeno , seeded and diced

Dressing

  • 1/4 cup peanut butter
  • 1 tbsp ginger , fresh, grated
  • 1 clove garlic , minced
  • 1 tbsp lime juice , can also use rice vinegar
  • 2 tbsp soy sauce , low sodium
  • 1-2 tsp yellow curry powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp turmeric , ground
  • 3-4 tbsp warm water , to thin dressing
  • salt , to taste
  • pepper , to taste

  1. In a large bowl, add salad ingredients.
  2. In a small bowl, mix together dressing ingredients.
  3. Pour over salad and mix to combine. Garnish with roasted cashews, cilantro, or green onion.
