Thai Chickpea Salad with Curry Peanut Dressing
Ingredients
Salad
- 1 red bell pepper , diced
- 1 cup carrots , shredded
- 1/2 head red cabbage , small, chopped
- 1 (15 ounce) can chickpeas , rinsed and drained
- 1/2 cup cilantro , chopped
- 1/4 cup green onion , chopped
- 1 jalapeno , seeded and diced
Dressing
- 1/4 cup peanut butter
- 1 tbsp ginger , fresh, grated
- 1 clove garlic , minced
- 1 tbsp lime juice , can also use rice vinegar
- 2 tbsp soy sauce , low sodium
- 1-2 tsp yellow curry powder
- 1/4 tsp cayenne pepper
- 1/4 tsp turmeric , ground
- 3-4 tbsp warm water , to thin dressing
- salt , to taste
- pepper , to taste

- In a large bowl, add salad ingredients.
- In a small bowl, mix together dressing ingredients.
- Pour over salad and mix to combine. Garnish with roasted cashews, cilantro, or green onion.
