- 12 cups spinach , fresh, trimmed
- 8 radishes , thinly sliced
- 1 large carrot , grated
- half red onion , sliced
- 2 tbsp white wine vinegar
- 1 tsp dijon mustard
- 1 garlic cloves , minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup olive oil

- Tear spinach into bite size pieces. Place in large salad bowl. Scatter radishes, carrot and onion, carrots, and radishes over top. (optionally - can also add cherry tomatoes and sliced hardboiled egg)
- In a separate bowl, mix together remaining ingredients for the dressing.
- drizzle dressing on salad, toss and coat
