Spicy Shrimp Tacos with Garlic Cilantro Lime Slaw

Ingredients

Lime sauce

  • 1/4 cup oil
  • 1/4 cup water
  • 1/2 cup green onion , chopped
  • 1/2 cup cilantro , chopped
  • 2 cloves garlic
  • 1/2 tsp salt
  • 2 limes , juiced
  • 1/2 cup sour cream , (full-fat Greek yogurt substitute)

Taco Spice

  • 2 tsp chilli powder
  • 2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 tsp sea salt , coarse

Toppings

  • 1 pound shrimp
  • 2-3 cups green cabbage , shredded
  • 8 small tortillas , corn or flour
  • avocados
  • cotja cheese , shredded
  • lime , wedges

  1. Pulse all sauce ingredients together in a food processor until smooth.
  2. Toss some of the sauce (not all) with the cabbage. Use leftover sauce for toppings.
  3. Pat the shrimp dry with paper towels. Toss the shrimp in a small bowl with the spice mix until coated. Heat a drizzle of oil in a large skillet over medium high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, flipping occasionally until shrimp are cooked.
  4. Assemble the tacos with toppings of your choice
