Spicy Crinkle Cookies

  • 3/4 cup shortening
  • 1 cup brown sugar , packed
  • 1 egg
  • 1/4 cup molasses , fancy
  • 1 tsp vanilla extract
  • 2 tsp baking soda
  • 2 tsp ginger , ground
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 1/4 cup sugar , granulated

  1. Place oven rack in centre of oven; preheat to 350 degrees. With pastry brush and a little shortening, lightly grease 2 baking sheets
  2. place shortening in large bowl. With electric mixer, beat shortening at high speed until fluffy. Add brown sugar; beat until even fluffier.
  3. Break egg into small bowl and add to batter along with molasses and vanilla. Beat until smooth.
  4. In separate bowl, whisk tougher flour, baking soda, ginger, cinnamon, allspice and salt; pour over batter. With wooden spoon, mix until no streaks remain.
  5. Scoop dough by level tablespoons and roll into balls. Roll in granulated sugar to coat. Place on cookie sheets, leaving 2 inch space between cookies.
  6. Bake - 1 sheet at a time - for about 12 minutes until flattened, cracked, and browned. Remove from oven.
  7. Repeat with remaining baking sheet of dough. Let first sheet cool completely before adding more dough so the dough doesn’t melt.
