Spicy Black Bean and Lentil Stew

  • 1 cup lentils , dried, rinsed
  • 1 can (15 oz) black beans , drained and rinsed
  • 1 onion , chopped
  • 2 garlic cloves , minced
  • 1 can (14.5 oz) tomatoes , diced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1/2 tsp paprika
  • to taste salt
  • to taste pepper
  • for garnish cilantro

  1. Heat oil in a large pot and sauté onion and garlic until fragrant.
  2. Add in lentils, black beans, diced tomatoes, cumin, chilli powder, salt and pepper, Stir well.
  3. Pour in vegetable broth and bring to a boil, reduce heat and simmer for 30 minutes or until lentils are tender. Garnish with cilantro before serving.
