Shrimp bowl with Cilantro Rice

- 1 cup pico de gallo , Bean/corn salad
- 1 avocado , sliced, Bean/corn salad
- 1 cup cherry tomatoes , Bean/corn salad
- 3 tbsp olive oil , Shrimp
- 3/4 tsp salt , Shrimp
- 3/4 tsp paprika , Shrimp
- 3/4 tsp garlic powder , Shrimp
- 3/4 tsp onion powder , Shrimp
- 3/4 tsp cumin , Shrimp
- 1/2 cup plain yogurt , Chipotle Ranch Dressing
- 1/2 cup mayonnaise , Chipotle Ranch Dressing
- 1 tsp apple cider vinegar , Chipotle Ranch Dressing
- 1 tsp dill , dried, Chipotle Ranch Dressing
- 1/2 tsp garlic powder , Chipotle Ranch Dressing
- 1/2 tsp onion powder , Chipotle Ranch Dressing
- 1/4 tsp salt , Chipotle Ranch Dressing
- 1/4 tsp black pepper , Chipotle Ranch Dressing
- 2-2 1/2 tsp adobo sauce , Chipotle Ranch Dressing

- Make the cilantro lime rice. Add rice to saucepan with 2 cups of water. Bring to a boil, cover and simmer for 15 minutes. Once done, add the salt and garlic powder. Cover it again and let steam for 10 minutes. Then stir in remaining rice ingredients.
- Make the bean/corn salad: drain and rinse beans and corn. Mix together with pico de Gallo and top with avocado slices and cherry tomatoes.
- Make the shrimp: put all spices and olive oil in a bag, then add shrimp and shake to coat. Cook shrimp in a fry pan.
- Make the Chipotle Ranch Dressing by adding all dressing ingredients together.
