Quick and easy lentil soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion , chopped
  • 2 garlic cloves , minced
  • 2 potatoes , medium, diced
  • 1 cup lentils , red or green
  • 4 cups vegetable broth
  • 1 tsp paprika
  • 1/2 tsp cumin , ground
  • 1/4 tsp chilli flakes , optional
  • to taste salt
  • to taste black pepper
  • to garnish parsley

  1. Heat olive oil in a large pot over medium heat. Saute onion and garlic until fragrant.
  2. Add diced potatoes, lentils, paprika, cumin, and chili flakes. Stir well.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 25 minutes or until lentils and potatoes are tender.
  4. Season with salt and pepper. Garnish with fresh parsley
