  • 5 eggs
  • 2 cups brown sugar , packed
  • 6 cups flour , all-purpose, sifted
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp mace , (could substitute cardamom)
  • 1/2 tsp nutmeg
  • 1/4 tsp coriander , ground
  • 1/8 tsp cardamom , ground
  • 3 tbsp black coffee , strong
  • 1 cup almonds , finely ground
  • 1 tsp lemon rind , grated
  • 1/2 cup mixed peel , chopped
  • icing sugar

  1. Beat eggs until very fluffy, about 5 minutes at high speed on the mixer. Add brown sugar gradually, beating well after each addition
  2. Sift flour, baking powder, salt, cinnamon, cloves, allspice, pepper, mace, nutmeg, coriander and cardamom together and add to creamed mixture along with coffee. Stir in almonds, lemon rind and peel. Shape into a ball and wrap in waxed paper. Chill several hours.
  3. heat over to 300 degrees. Shape dough into small balls, using about 2 tsp for each one. Set on lightly-greased cookie sheets. Bake about 20 minutes or until firm to the touch and lightly browned. Cool on racks. Roll in icing sugar before storing.
