Mediterranean Vegetable Galette

- 1 sheet puff pastry , pie dough can be substituted
- 1 zucchini , thinly sliced
- 1 red pepper , thinly sliced
- 1/2 red onion , thinly sliced
- 1/2 cup cherry tomatoes , halved
- 1/4 cup kalamata olives , pitted and sliced
- 1/4 cup feta cheese , crumbled
- 1 tbsp olive oil
- 1 tsp oregano , dried
- to taste salt
- to taste pepper
- 1 egg , for wash

- Preheat the oven to 375 degrees F. Roll out the puff pastry on a baking sheet lined with parchment paper.
- Arrange zucchini, bell pepper, onion,cherry tomatoes, and olives in the centre of the pastry, leaving a border around the edges.
- Sprinkle crumbled feta over the vegetables and drizzle with olive oil. Season with oregano, salt, and pepper.
- Fold the edges of the pastry over the vegetables to create a rustic galette shape. Brush the crust with beaten egg.
- Bake for 30-35 minutes, until the crust is golden and the vegetables are tender.
