Mediterranean Vegetable Galette

  • 1 sheet puff pastry , pie dough can be substituted
  • 1 zucchini , thinly sliced
  • 1 red pepper , thinly sliced
  • 1/2 red onion , thinly sliced
  • 1/2 cup cherry tomatoes , halved
  • 1/4 cup kalamata olives , pitted and sliced
  • 1/4 cup feta cheese , crumbled
  • 1 tbsp olive oil
  • 1 tsp oregano , dried
  • to taste salt
  • to taste pepper
  • 1 egg , for wash

  1. Preheat the oven to 375 degrees F. Roll out the puff pastry on a baking sheet lined with parchment paper.
  2. Arrange zucchini, bell pepper, onion,cherry tomatoes, and olives in the centre of the pastry, leaving a border around the edges.
  3. Sprinkle crumbled feta over the vegetables and drizzle with olive oil. Season with oregano, salt, and pepper.
  4. Fold the edges of the pastry over the vegetables to create a rustic galette shape. Brush the crust with beaten egg.
  5. Bake for 30-35 minutes, until the crust is golden and the vegetables are tender.
