Korean Gochujang Beef Noodles

- 8 oz beef , sirloin thinly sliced
- 3 tbsp korean chili paste
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 4 garlic cloves , minced
- 1 inch ginger , grated
- 8 oz rice noodles
- 1 carrot , julienned
- 2 green onions , sliced
- 1 cup cabbage , napa, shredded
- 1 tsp sesame seeds
- 1 tbsp chili flakes
- to taste pepper

- In a small bowl, mix chilli sauce, soy sauce, rice vinegar, and sesame oil. Set aside.
- Cook noodles according to package. Drain and set aside.
- Heat vegetable oil in a large skillet over medium high heat. Add garlic and ginger, sauté until fragrant (about 1-2 minutes).
- Add the beef and cook for 4-5 minutes until browned. Season with salt and pepper. Stir in the chilli sauce mixture and cook for another 2-3 minutes until the sauce thickens.
- Toss in the cooked noodles, carrots, Napa cabbage and green onions. Stir well to coat everything in the sauce. Garnish with sesame seeds and chili flakes.
