- 1 cup butter , unsalted; margarine okay as a substitute
- 1 cup sugar
- 1 cup pumpkin , cooked, pureed
- 1 egg
- 2 cups flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup walnuts , coarsely chopped
- 1 cup raisins
Icing
- 2 cups icing sugar
- 1/4 cup butter , margarine as a substitute
- 1 tsp vanilla extract
- 3 tbsp rum , canals use whipping cream or fresh orange juice

- Preheat oven to 350 degrees. Cream butter and sugar until fluffy. Add pumpkin, egg and vanilla and mix well.
- Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir into butter mixture until well blended. Add nuts and raisons. Drop by teaspoonful onto parchment paper covered baking sheet, about 2 inches apart. Bake about 15 minutes or until golden. Cool.
- Cream icing sugar and butter. Add remaining icing ingredients and beat until smooth. Drizzle over cookies
