- 2 cups ham , cubed and fully cooked
- 2 cups potatoes , peeled and cubed
- 2 stalks celery , chopped
- 3 cups water
- 1/4 cup and 3 tablespoons margarine , used in different steps
- 2 teaspoons onion , chopped
- 1 green pepper , diced
- 3 tablespoons flour
- 1 cup milk
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup cheddar cheese , shredded
- 1/2 cup bread crumbs , dry
- 1 large carrot , sliced

- Preheat oven to 350 degrees
- Cook potatoes, celery, and carrot in boiling water for 20min.
- Drain and transfer to 2 quart baking dish
- Melt 3 tablespoons of margarine in a large skillet over medium heat.
- Cook and stir ham, green pepper, and onion until vegetables are tender (5ish min).
- Transfer ham mixture to baking dish and mix with potato mix.
- Melt the reaming 1/4 cup margarine in a clean pot. Add flour and stir until smooth.
- Gradually stir in milk and season with salt and pepper.
- Bring to a boil, stir constantly until thickened.
- Add cheddar cheese and still until melted.
- Pour cheese mixture over ham and potatoes.
- Sprinkle breadcrumbs over mixture.
- Bake for 25-30min.
- Let casserole rest for 5 to 10min as it will be hot on the inside.
