Ham Potato Casserole

Ingredients

  • 2 cups ham , cubed and fully cooked
  • 2 cups potatoes , peeled and cubed
  • 2 stalks celery , chopped
  • 3 cups water
  • 1/4 cup and 3 tablespoons margarine , used in different steps
  • 2 teaspoons onion , chopped
  • 1 green pepper , diced
  • 3 tablespoons flour
  • 1 cup milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cheddar cheese , shredded
  • 1/2 cup bread crumbs , dry
  • 1 large carrot , sliced

  1. Preheat oven to 350 degrees
  2. Cook potatoes, celery, and carrot in boiling water for 20min.
  3. Drain and transfer to 2 quart baking dish
  4. Melt 3 tablespoons of margarine in a large skillet over medium heat.
  5. Cook and stir ham, green pepper, and onion until vegetables are tender (5ish min).
  6. Transfer ham mixture to baking dish and mix with potato mix.
  7. Melt the reaming 1/4 cup margarine in a clean pot. Add flour and stir until smooth.
  8. Gradually stir in milk and season with salt and pepper.
  9. Bring to a boil, stir constantly until thickened.
  10. Add cheddar cheese and still until melted.
  11. Pour cheese mixture over ham and potatoes.
  12. Sprinkle breadcrumbs over mixture.
  13. Bake for 25-30min.
  14. Let casserole rest for 5 to 10min as it will be hot on the inside.
