Garlic Butter Honey BBQ Chicken Tacos

  • 1 lb chicken breasts , boneless and skinless
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chilli powder , optional
  • soft, small tortillas , corn or flour

Toppings

  • shredded lettuce
  • diced tomatoes
  • 1 avocado , sliced
  • shredded cheese
  • sour cream
  • chopped cilantro
  • wedges lime

butter sauce

  • 4 tbsp butter , unsalted
  • 4 cloves garlic , minced
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar , optional

  1. Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper and cook in the skillet for 5-7 minutes, stirring occasionally until golden brown and cooked through. Remove and set aside.
  2. Make the garlic butter honey BBQ sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds to 1 minute until fragrant. Be careful not to burn the garlic. Stir in the BBQ sauce, honey,and apple cider vinegar. Whisk until smooth and well combined.
  3. Return the cooked chicken to the skillet, tossing to coat evenly in the sauce. Simmer for 2-3 minutes, allowing the flavours to meld and the sauce to thicken.
  4. Warm the tortillas in a dry skillet, on a griddle, or wrapped in foil in the oven until soft and pliable.
  5. Assemble the tacos. Divide the sauce across the tacos, add chicken mixture and your favourite toppings.
