Fresh Cucumber and Pepper Thai Salad

  • 2 english cucumber
  • 2 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 jalapeno , seeded and chopped
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 lemon juice
  • 2 tsp sugar
  • 1/4 tsp salt
  • 3 tbsp mint leaves , chopped
  • 2 tbsp basil leaves
  • pinch red pepper flakes

  1. slice cucumbers into paper thin rounds. Slice the peppers into thin strips. Put the peppers, cucumbers, and jalapeño peppers into a bowl.
  2. Combine the rest of the ingredients. Add to the salad bowl. Toss well.
  3. Let stand for at least one hour in the refrigerator before serving
