Fresh Cucumber and Pepper Thai Salad

- 2 english cucumber
- 2 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 2 jalapeno , seeded and chopped
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 lemon juice
- 2 tsp sugar
- 1/4 tsp salt
- 3 tbsp mint leaves , chopped
- 2 tbsp basil leaves
- pinch red pepper flakes

- slice cucumbers into paper thin rounds. Slice the peppers into thin strips. Put the peppers, cucumbers, and jalapeño peppers into a bowl.
- Combine the rest of the ingredients. Add to the salad bowl. Toss well.
- Let stand for at least one hour in the refrigerator before serving
