Chilli Lime Quinoa Black Bean Salad

Ingredients

Main Dish

  • 3/4 cup quinoa , uncooked
  • 1 1/2 cup water
  • 1 medium bell pepper
  • 1/2 medium onion , diced
  • 1 cup grape tomatoes , sliced or halved
  • 1 15 oz. can black beans , drained and rinsed
  • 1 cup cilantro , loosely packed and chopped
  • 1 medium avocado , cubed
  • 1/2 cup feta cheese , crumbled

Vinaigrette

  • 1/3 cup olive oil
  • 2 (1/4 cup) limes
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. chilli powder
  • a pinch cayenne

  1. Make vinaigrette by adding all vinaigrette ingredients together
  2. Rinse quinoa, boil water and cook quinoa according to instructions.
  3. Mix together salad ingredients.
  4. Serve all items together
