Chilli Lime Quinoa Black Bean Salad
Ingredients

- 3/4 cup quinoa , uncooked
- 1 1/2 cup water
- 1 medium bell pepper
- 1/2 medium onion , diced
- 1 cup grape tomatoes , sliced or halved
- 1 15 oz. can black beans , drained and rinsed
- 1 cup cilantro , loosely packed and chopped
- 1 medium avocado , cubed
- 1/2 cup feta cheese , crumbled
Vinaigrette
- 1/3 cup olive oil
- 2 (1/4 cup) limes
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. chilli powder
- a pinch cayenne

- Make vinaigrette by adding all vinaigrette ingredients together
- Rinse quinoa, boil water and cook quinoa according to instructions.
- Mix together salad ingredients.
- Serve all items together
