Chicken Cacciatore

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 pounds chicken wings and drumsticks
  • to taste salt
  • to taste pepper
  • 4 cloves garlic , minced
  • 1 pound mushrooms , white,cleaned and chopped
  • 1 medium green bell pepper , chopped
  • 1 medium red bell pepper , chopped
  • 1 medium yellow bell pepper , chopped
  • 1/4 tsp turmeric
  • 2 tsp oregano , dried
  • 2 bay leaf
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 14.5 oz tomatoes , 1 can
  • 3/4 cup kalamata olives , pitted
  • 1 tbsp parsley , chopped

  1. Preheat oven to 400 degrees F. Add the olive oil and butter to a large skillet and heat until butter has melted. Add the chicken to the skillet and season with salt and pepper. Fry on both sides until golden, about 4 minutes per side. Transfer the chicken to a plate and set aside.
  2. Add the garlic and onions to the skillet and sauté for two minutes until the onion is translucent and the garlic becomes aromatic. Add the chopped mushrooms and cook for about 5 minutes until they are cooked. Add the peppers, stir and cook for a couple more minutes until the peppers soften a bit.
  3. Add the turmeric, oregano, bay leaves, red wine, tomato paste, and diced tomatoes. Stir well and bring to a boil.
  4. Transfer to an oven safe pot. Add the chicken back in and bake covered for 45 minutes to an hour. Top with olives and garnish with parsley.
