- 1 lb beef stew meat , (or chicken)
- 2 tbsp vegetable oil
- 1 onion , chopped
- 3 garlic cloves , minced
- 1 tbsp ginger , grated
- 2 tbsp curry powder
- 1 tsp allspice , ground
- 1/2 tsp turmeric , ground
- 1/4 tsp cinnamon , ground
- 2 large potatoes , peeled and diced
- 1 can coconut milk , 14 oz
- 1 cup beef broth , (or chicken broth)
- to taste black pepper
- chopped, for garnish cilantro

- Brown the beef or chicken: In a large pot, heat vegetable oil over medium high heat. Add the beef cubes and brown them on all sides for about 5-7 minutes. then set aside.
- In the same pot, toss in your chopped onion, garlic and ginger. Saute for 3-4 minutes until everything is fragrant. Add in the curry powder, allspice, turmeric, cinnamon. Let spices cook for 1-2 minutes.
- Reintroduce the beef to the pot, add in the diced potatoes, coconut milk, and beef or chicken broth. Stir it all up, bring to a simmer, then reduce the heat to low. Cover and let it cook for 45 minutes to an hour until everything is tender.
- Sprinkle some salt and pepper to taste and garnish with fresh cilantro.
