Caribbean Beef Curry

  • 1 lb beef stew meat , (or chicken)
  • 2 tbsp vegetable oil
  • 1 onion , chopped
  • 3 garlic cloves , minced
  • 1 tbsp ginger , grated
  • 2 tbsp curry powder
  • 1 tsp allspice , ground
  • 1/2 tsp turmeric , ground
  • 1/4 tsp cinnamon , ground
  • 2 large potatoes , peeled and diced
  • 1 can coconut milk , 14 oz
  • 1 cup beef broth , (or chicken broth)
  • to taste black pepper
  • chopped, for garnish cilantro

  1. Brown the beef or chicken: In a large pot, heat vegetable oil over medium high heat. Add the beef cubes and brown them on all sides for about 5-7 minutes. then set aside.
  2. In the same pot, toss in your chopped onion, garlic and ginger. Saute for 3-4 minutes until everything is fragrant. Add in the curry powder, allspice, turmeric, cinnamon. Let spices cook for 1-2 minutes.
  3. Reintroduce the beef to the pot, add in the diced potatoes, coconut milk, and beef or chicken broth. Stir it all up, bring to a simmer, then reduce the heat to low. Cover and let it cook for 45 minutes to an hour until everything is tender.
  4. Sprinkle some salt and pepper to taste and garnish with fresh cilantro.
