- 1/2 cup black beans , dried or canned
- 1/2 cup green lentils
- 1 red bell pepper , diced
- 1 yellow bell pepper , diced
- 1 hot chile , green or red, seeded and chopped finely
- 2 tbsp thyme leaves , chopped
- 2 garlic cloves , minced
- 4 tbsp red wine vinegar
- 4 tbsp olive oil
- 1/2 tsp black pepper
- 1/2 tsp salt , optional
- lettuce , romaine
- 2 cups tomatoes , seeded & diced

- If using dried beans, prepare by boiling and draining. If using canned, drain and set aside.
- In a large bowl, combine peppers, tomatoes, Chile, thyme, and garlic. Mix well.
- In a small bowl, whisk together vinegar, oil, pepper and salt. Pour over the pepper-tomato mixture.
- Add cold beans to the pepper tomato mixture and mix well to coat. Serve over lettuce or spinach.
