Asian Chicken Lettuce Wraps

  • 1 tbsp sesame oil
  • 1/4 cup onion , diced
  • 2 garlic cloves , minced
  • 1 tbsp ginger , minced
  • 10 oz. chicken , ground
  • 1/4 cup soy sauce , low sodium
  • 2 tbsp thai sweet red chilli sauce
  • 5 tbsp lime juice
  • 1 tsp maple syrup
  • 1/3 cup cashews , chopped
  • 1/4 cup scallions , chopped
  • 1/4 cup cilantro , chopped
  • 1/4 to 1/2 cup carrots , shredded
  • garnish sesame seeds
  • 1 head butter lettuce , leaves rinsed and dried

  1. Heat the sesame oil in a pan over medium-high heat. Add the diced onions and cook for 2-3 minutes until they soften and turn translucent. Stir in the minced garlic and fresh ginger, cooking for another two minutes until fragrant.
  2. Add the ground chicken, breaking it apart. Season with salt and pepper and cook until the chicken is fully browned and no longer pink, about 3-4 minutes.
  3. In a small bowl, whisk together the soy sauce, Thai sweet red chilli sauce, lime juice, and maple syrup.
  4. Pour the sauce over the cooked chicken, sprinkle with chopped cashews and stir well. Reduce the heat to low and cook for another 2 minutes to let the flavours meld together.Remove from the heat and stir in shredded carrots, scallions, and cilantro.
  5. Spoon mixture onto lettuce leaf and drizzle some of the sauce from the pan on top for extra flavour.
