Asian Chicken Lettuce Wraps

- 1 tbsp sesame oil
- 1/4 cup onion , diced
- 2 garlic cloves , minced
- 1 tbsp ginger , minced
- 10 oz. chicken , ground
- 1/4 cup soy sauce , low sodium
- 2 tbsp thai sweet red chilli sauce
- 5 tbsp lime juice
- 1 tsp maple syrup
- 1/3 cup cashews , chopped
- 1/4 cup scallions , chopped
- 1/4 cup cilantro , chopped
- 1/4 to 1/2 cup carrots , shredded
- garnish sesame seeds
- 1 head butter lettuce , leaves rinsed and dried

- Heat the sesame oil in a pan over medium-high heat. Add the diced onions and cook for 2-3 minutes until they soften and turn translucent. Stir in the minced garlic and fresh ginger, cooking for another two minutes until fragrant.
- Add the ground chicken, breaking it apart. Season with salt and pepper and cook until the chicken is fully browned and no longer pink, about 3-4 minutes.
- In a small bowl, whisk together the soy sauce, Thai sweet red chilli sauce, lime juice, and maple syrup.
- Pour the sauce over the cooked chicken, sprinkle with chopped cashews and stir well. Reduce the heat to low and cook for another 2 minutes to let the flavours meld together.Remove from the heat and stir in shredded carrots, scallions, and cilantro.
- Spoon mixture onto lettuce leaf and drizzle some of the sauce from the pan on top for extra flavour.
